This former quarry is the temple of Crémant de Bourgogne, a sparkling wine that's worth getting to know. In Saint-Bris-le-Vineux, as you walk through the corridors, underground passageways and caves carved out of the limestone rock, you'll discover the secrets behind this speciality of Burgundy. The temperature here is ideal, not only for the Crémant ageing process, but also for your comfort at the hottest time of day. The icing on the cake? In Burgundy, you'll have no trouble finding a place to cool off. All you have to do is visit the winegrowers, whose cellars remain at a cool and constant temperature throughout the seasons. Few people are aware that Beaune, the wine capital of Burgundy, conceals beneath its surface a whole maze of underground passageways and cellars. This establishment alone, which boasts the Vignobles & Découvertes wine tourism seal of approval, the rows of prestigious wines and oak barrels reach a total of 5 km, all in a cool, hushed atmosphere. This is a must!

This beautiful estate carrying the Vignobles & Découvertes certification label bends over backwards to make you feel welcome. The unusual cellar stays cool within the walls of a deconsecrated Romanesque church in the heart of the village of Fuissé in south Burgundy. A magical place that's reflected in the Pouilly-Fuissé wines that are grown and aged here.
