This former quarry is the temple of Crémant de Bourgogne, a sparkling wine that's worth getting to know. In Saint-Bris-le-Vineux, as you walk through the corridors, underground passageways and caves carved out of the limestone rock, you'll discover the secrets behind this speciality of Burgundy. The temperature here is ideal, not only for the Crémant ageing process, but also for your comfort at the hottest time of day. The icing on the cake?
